hi hope you can help? I am trying to organise a ski holiday for the family and a friend's family, on a shoe string. I was hoping for ideas on resorts and maybe even selfcatering accomadation?

chrisby, welcome to Snowheads.  You'll get any amount of help but you will need to be a bit more specific. There are thousands of resorts and hundreds of thousands of self catering apartment.
Biggest question - when are you going? And how flexible are you on dates? And where have you been before and what kind of thing (apart from a bit of snow) are you looking for?

Are you thinking package with a TO or DIY and driving or organising your own flights etc?
You need to think about your dates too - nowhere is going to be shoestring-friendly during the peak weeks of New Year, Feb half term (most of Feb and into March in France), but Easter can be much easier on the pocket if sometimes a bit of a gamble snow-wise. However, if you are not committed to school holidays, the prices will be lower, resorts quieter and you'll have more choice.
Let us know when you need to go, how many, if you are happy all in one apartment or chalet, what kind of skiing/non-skiing/other activities you like and what kind of budget you're looking at (shoestring means different things to different people  ), and you'll get lots of suggestions

Anniepen, is right that dates play a big part in the pricing.
Mid Jan and Mid March are the cheapest times to go if you can wangle a week off school for the kids, but failing that Easter as Anniepen, suggested or Christmas are the cheapest of the school holiday weeks.
Resort wise, the cheapest option is usually the Bulgarian resorts which are also cheap for tuition too if the kids need lessons. But, in general the resorts are smaller and less well maintained (Bulgaria fans don't hate me for writing that  ). Looking at the European resorts, try to go for somewhere smaller or, if you want a big ski area, somewhere lower down in that area.
Choosing between catering and self-catering depends price wise on what your group is like. Self catering is a lot cheaper if you come in the car and can stock up in the valley, if you're happy to eat relatively cheap and simple meals, and not eat out too much. Catered chalets work out cheaper if you only have the option to shop in resort (supermarkets are quite expensive) or if you would otherwise end up eating out a lot.
If you decide to go the tour operator route, Crystal (catered and self), First choice (catered), Ski World (catered) and direct ski (self catered) are among the cheapest who offer flights, transfers and accomodation all in.
If you prefer to go DIY, your best option might be to choose your budget and what you're looking for and post it here - lots of snowheads rent accomodation both catered and self catered. Alternatively chalets direct have a solutions room where you can post what you're looking for and tour operators come back to you with prices.
