boabski, what's your recipe for gulaschsuppe? I'd like to make some but haven't found a terribly convincing looking recipe. I have a clear memory of what I had in Austria and none of the recipes I've seen look as though they'd produce quite the same thing. this one for example http://www.food.com/recipe/gulaschsuppe-goulash-soup-72160 has 1" cubes of beef in it. But maybe the soup I remember was atypical - it was fairly smooth.

pam w, that's pretty much the same recipe I use although I add a tin of chopped tomatoes and a carton of passata, along with a little chilli powder. Make it the day before and tastes amazing. The key is the carraway seeds to give the distinctive flavour as I tried without and didn't quite taste as authentic

Gerhard the DJ from Mooserwirt is a must, "Its raining men", "Final Countdown" etc also copious amounts of Gluhwein and Weissenbiers. Plus a Gernknoedeln (the boob-job looking dumpling) mit Vanillesauce.
Haben Sie ein gute Naecht!

Hot stone thingy for meat - check (OK it's more French than Austrian but yummy nonetheless)

I've seen it in Switzerland and Austria also - in German it's called a Feuerstein, so perfectly authentic.

juliad, Käse Spätzle are Bavarian (typically from the Allgäu- the Austrians have their own version called Kass'nocken
boabski, What about Kaiserschmarrn and Salzburger Nockerl for afters instead of Strudel? Way nicer and more unusual

I've eaten this dish numerous times in Austria and the Allgäu (& Südtirol), and it is definitely called different things in the various regions. But I've certainly ordered Käsespätzle from the menu in the Tirol. In the Allgäu I've frequently come across it as Kässpatzen. I don't think there is one particular name for it...

Yes, that is fairly atypical. It is normally pretty lumpy. Closer to what would be called a stew in Britain than to a smooth soup.

Alastair Pink, how many was that Nockerl supposed to serve? Please don't tell me it was for one.
I'll have a go at that gulaschsupper recipe, but I'll chop up the meat smaller. I'd rather not have to eat my soups with a knife and fork!

If you need a hand with soundtrack....just ask.
