Yesterday I was skiing the goose gully at Nevis. It’s on the piste map as a red run but they only send the basher up if it is really really needed.
I was skiing wind blown untracked powder (for the first 2 runs at least) and getting the hang not forcing the turn just putting the skis in the right place and let it happen, the faster I was going the easier it was.
It was the most fun I’ve ever had on skis
Is this what “off piste” skiing is?

It sounds like you were on an ungroomed piste.
Off piste skiing is, literally, not skiing on a pisted run, which brings with it images of untracked powder snow etc etc. However, I have skiied some wonderful boot deep untracked powder on piste.

I'd rather find it on the piste. Lot safer and cheaper!

the main difference between "true" off-piste and what you describe is the base. Pistes are normally groomed - this act compacts the snow givng the pistes a thick, solid base. Off piste, there is no such compaction and as such there remains a risk that an fault will give way between two layers, which can cause an avalanche. In terms of skiing thoughm it's essentially the same. Fun, isn;t it!

Off-piste is off the piste.
Powder, on the other hand, can be anywhere, including on piste. It's possible to have knee deep powder right off the lift if you got lucky with your timing. (e.g. 07 MSB)
As far as the fun of powder, yep, doesn't matter where.
