should be able to shave a fingernail which would mean they are sharp enough...but if a new edge then should be even more deadly...
I would see how they go at the PSB and get them sharpened if you feel they need it, out there..

The shaving the fingernail thing can be caused by a file bur, rather than real sharpness. Personally, I keep my edges sharp with a file edging tool set at the correct angle, when I am at resort, and potter round to Spyderjon's fo coffee and biccies and a chat - no, that should read to get the edges properly sharpened along with a base service - on return.
However, I agree with Kramer that the edges should be OK on new skis. Surprisingly, wax is another matter.

achilles, burrs can cause the edge to feel sharp to the touch and to cut skin, I don't like that either. To my mind a proper edge should not feel like that, yet still be able to shave a nail, a plastic bottle cap, or a ptex repair stick.
