Before you go looking at Banff for next winter check out the "bus service" thread in the Resorts section! Might change your mind.
As far as weather goes, variable - anything from minus 30 to plus 2.
Snow, anything from 3m base to jumping rocks...

Freezing cold.
Wait until Mar, when it warms up a bit.

Went late jan early feb one year and it was -2 when we arrived and then went down to -37 five days later and then stayed about -20, cold does not describe it.

MFC, it was -25 most days and -40 at night when I was there in January about 8 yrs ago. You really need to wrap up and have a balaclava etc. as frost bite can be an issue apparently. Having said that we had lovely clear days with lots of sun. From what I remember the snow was pretty good, although very compacted and hard though because of the temperatures.

I went in middle of Jan this year and it was between -5 and -15 most days... lot's of snow but packed, well groomed. take some inner gloves and a balaclava just in case.

I've had -5 and I've had -35. It's a gamble. One day at LL it was too cold to start the lift until the sun came around the mountain and warmed it up a bit.
Face mask, silk inner gloves and hand/toe-warmers are all advisable.
Also, if it is very cold, assuming you're skiing with a friend, make sure that you monitor each other for incipient frosbite.

Very cold last January but not to the extremes that it can be. The advice of the post above is essential as I stupidly once went without a face mask for a quarter of an hour and my face stung for the rest of the day!

And love to help out and answer questions and of course, read each other's snow reports.

Make sure you check out the transportation and hope they are getting it sorted. Otherwise hire a car.
