Anybody see any real reason why pre-drilled skis shouldn't be plugged & drilled again. (freeride settings instead of the previous freestyle).

Make sure the holes aren't too close together (which they shouldn't be moving what you're talking, normally about 20-30mm) and make sure the old holes are very well plugged with waterproof glue so no moisture is getting to the core.
Otherwise it won't make any difference in general.

No reason at all. The difference between the two settings should ensure that the new holes are at least a cm from the old locations - if not you'd probably need to helicoil the new location to ensure a secure fix. Use Araldite 2010 or 2011 to glue the plugs in as it's megastrong, waterproof & flexible. If the ski has a metal top sheet then use a 4.1mm drill & tap the new holes with a #12AB tap. If no metal then use a 3.6mm drill & the binding screws self tap (usually). After drilling either very slightly countersink the hole or run a chisel over the surface to remove the raised edge from the drilling/tapping to ensure the binding beds flat on the top sheet. Don't overtighten the binding screws (4.5Nm torque which is actually not that much force when using a 6" no.3 Pozi driver) & use a waterproof pva glue to bond them in. The sure way to overtighten the screws & strip the thread is to use a battery drill/driver as they usually don't have a fine enough torque setting & certainly don't have enough feel.
