Going our first time with 6 kids (ages 7-14) during peak season (Christmas-New year). We will have lesson in Klosters or Saas-Fee.
Is there a reasonable chance we will not find ski equipment on site? Should we reserve and pay in advance?

You will get a better rate by booking in advance.
Adult skis wouldn't be a problem if you 'just turn up' ; but not so sure about ones for kids....

@michel39, I'm not sure you necessarily get a better price I know (definitely one and probably three) high end shops where you don't get a better price but you do get re-assurance, which is worth more than the money, no?

I'd be amazed if you turned up and couldn't find hire skis anywhere in resort, even if they are some of the older ones they keep in reserve - but in all likelihood you'd walk into a shop full of skis.
That said pre-booking lets you spread the cost a bit and gives you a known price when you book/one less thing to stress about.
Two quick comments on ski boots:
1. Pack one pair of ski socks for everyone in a single bag. You need them to try in the boots and saves a panicked bag rummage right after arriving!
2. Check out some of the boor fitting threads for an idea of what a ski boot should feel like on your foot, as nobody will tell you as a beginner for some reason.

try and book directly with the shop if you can, using the big sites (interpsort/sport 2000 etc or through the tour operator) normally results in the shop getting about 25% of what you pay

And additionally, it is much easier to get a refund if you cancel if you've booked direct
