I stayed at the Helvetia on Bahnhofstrasse 4 years ago, pre-Christmas. 70CHF per night for a single, B&B. Bit of a walk to and from lifts, but great location for bars, etc. Room was decent and breakfast good.

Found prices so expensive on our last trip that we ended up staying in Taesch - still a lot cheaper, even allowing for the train fare to Zermatt.

2 person room in the hostel is currently at 146 chf per night for the weekend, cheaper during the week at 132 chf per night. Includes breakfast, and private shower and wc.
Of course, you must be Swiss (covid restrictions) and a member! (membership is not expensive in Scotland at least)
1 person room is cheaper.
I have stayed there, but in a shared 8 person dorm over Xmas. Would recommend it.

I stayed in the Zermatt Youth Hostel too, was nice enough and good value in an otherwise expensive Switzerland, would definitely go back if I was going to Zermatt.
