This is a concise lift of ski resort and country openings. If you want to add information follow the format below.
1. Ski lifts open or closed and to whom
2. Travel restrictions to visit the country
3. Hotel, restaurant restrictions.
I'll copy updates to the top of the thread.
Andorra (4 Dec) - Grandvalira : Opening delayed from the planned 5th Dec until government makes a decision. Currently scheduled for January. Need a Northside test within 72 hours of arrival for stays more than three nights.
Austria (2 Dec) : Lifts scheduled to open on the 24th December but hotels and restaurants closed to 6th January for tourists. So practically just day trippers and locals only. international arrivals intending to stay in Austria for more than 24 hours, have to quarantine for 10 days.
Bulgaria (2 Dec) : everything is expected to open as pre-announced on the 19th Dec. Usual COVID precautions. No bars/clubs will be allowed to operate. No group lessons. restaurants/bars can only do take away until the 21st. EU/UK citizens can enter freely.
England (2 Dec) : YadMoss (snow permitting), Raise, Weardale for club members only
Finland (1 Dec) : lifts are open, but the borders are closed to non-resident non-nationals
France (1 Dec) : Resorts + accommodation + shops open but ski lifts, ice rinks, pools closed. Restaurants closed except for take away. Other winter sports possible. Govt to announce restrictions on travel to countries with skiing open.
Germany : No ski lifts
Iceland[2] (2 Dec) : https://www.skardsdalur.is/ (plan to open in December) Visitors need 2 tests and a 6-day quarantine
India (1 Dec) : Gulmarg in Kashmir is also already open for skiing with quite a lot of snow
Italy[1] (2 Dec) : Ski lifts closed to the 15th Jan 2021. Covid test on arrival or 72 hours prior to travel
Scotland (2 Dec) : 4 of 5 Scottish areas aiming to open on (if not before) 19th December. Snow making underway at CairnGorm, Glencoe and the Lecht for beginner areas. Travel restrictions from rest of UK.
Serbia - Kopaonik announced to open on the 6th of Dec.
Spain : Currently planning to open. Fresh snow in the Sierra Nevada and Eastern Pyrenees, Spain requires a negative PCR test within 72 hours of your arrival if by air or sea.
Switzerland : (2 Dec): Ski lifts open/planned to open. Restaurants closed in the Valais to mid December. non UK/EU/EFTA citizens are not allowed to enter Switzerland from the UK.
Norway : Self-quarantine for 10 days, PCR test for entry from "red" countries incl. the UK for non-residents.
Sweden : Ban on non-EU and non-EEA citizens arriving from outside of the EU until at least 22 December 2020. British nationals are not affected by this ban. No general quarantine obligation for travellers entering Sweden
USA (4 Dec) : Ski resorts open to US residents.
Canada (2 Dec) : border closed for international travellers until at least 21st Jan

@davidof, Austria: ski areas open/partially open, but no ski holidays, so no hotels or gastronomy. Essentially that means skiing for locals and day trippers with butties and a thermos flask.

Switzerland: everything that can open, will open. Expect to prebook and wear a mask when not skiing. Bring credit cards and don’t look at the bill. Potential changes to gatherings and restaurants (no more than 4) but hasn’t been passed by the parliament yet

4 of 5 Scottish areas aiming to open on (if not before) 19th December. Snow making underway at CairnGorm, Glencoe and the Lecht for beginner areas and some snow forecast for later this week.
Who can travel to Scottish Ski Areas is likely to change before the planned opening date of 19th Dec. Next weeks review of Covid protection levels is like to see a number of changes and travel restrictions are under review wrt to the new English Covid tiers.
At present travel to or from Scotland to rest of the UK and the CTA is restricted to essential / exempt purposes only.

French President Emmanuel Macron announced on Tuesday that France will be applying restrictions to prevent people from going to Swiss ski resorts to slow the spread of COVID-19.
Macron said French ski slopes would remain closed during the holiday season, according to The Associated Press. Switzerland is not part of the European Union and has allowed ski resorts to largely operate as they usually do.
"If there are countries ... which maintain their ski resorts open, we will have to take control measures," said Macron when speaking on dissuading people from going to these areas.
Macron made the comments during a press conference following a meeting with with Belgian Prime Minister Alexander De Croo. Details on the restrictions will be decided on in the next few days, Macron said.

Speculation: I read the other day that they were planning to allow previously-infected people in without quarantine.
I'm not interested in that, but it bodes well for what will likely happen for people who can prove they're vaccinated.

Switzerland seems to vary per canton, but for Valais canton, public eating and drinking establishments are closed to public. More details: https://www.valais.ch/en/information/coronavirus-2019-ncov.
For restaurants attached to hotels, it translates into restaurants only available to the hotel guests only plus other social distancing arrangements. Anyone local knows how this "closed to public" apply for standalone restaurants? Takeaway only? How about mountain restaurants on the slopes?

Canton Bern restaurants already open, in Vaud they will open on 10th Dec, in Valais on 14th Dec.

I've just had an email from CIS Immobilier advising us that since the lifts in Les Arcs will be closed over Christmas/New Year all accommodation bookings must be refunded in full if the client cancels.

USA = all 470 resorts in 37 states set to open (snow permitting). Reserve tickets and hotels in advance. Do not just turnup. Know before you go. Wear mask.

Nobody from the UK, Ireland, or EU Schengen can (directly) enter the US right now.
In the same bucket as Iran and Syria.
Lift capacity at most US resorts is probably going to be 20-80%, averaging 50%, depending on local decision.

St Anton just announced that lifts will start turning on 24 Dec, but hospitality will remain closed until 7 Jan. The announcement noted that the dates were subject to change, depending on case numbers.

Norway - seems to allow skiing and resorts plan to open as far as I know, no restrictions I have heard about on lifts (and not really any gondolas to worry about).
Now the downside, just to get into Norway you must have had a negative test having been done no more than 72 before arrival (Valid test methods are the standard PCR-based analysis or the rapid antigen-based test but there are various exemptions but too many to detail here - look them up) AND as UK is a red territory you still have to quarantine for 10 days (again various exemptions). So unless UK moves into yellow (they have clearly defined criteria to move and I think review countries every 2 weeks), its a no goer at the moment unless you fancy stumping up for a test and spending 10 days in a Norwegan hotel twiddling your thumbs or some other appendage.
Perhaps they may amend to allow vaccinated persons and you score a vaccine, maybe soon if you are an NHS worker or an over 80s UK care home resident, so even then not much chance for a while for the usual UK skiing demographic.

Latest announcement from the prime minister of Andorra is that ski resorts will be able to open from the beginning of January - however they are still waiting to confirm the exact date.
