Hi.
I've just got back from my first ski trip in Tignes and have definitely got the bug, so much so I'm already planning the next trip! My wife is a teacher so unfortunately we are restricted to the dates we can go. We are thinking about going the week before Christmas, as I get 2 weeks off work anyway, so wouldn't need to use additional holiday and it is a lot cheaper than February half term.
I know there is no guarantee of snow at that time of year and we are prepared to accept that. My question is where would be a good resort in Europe for 2 advancing beginners to go at Christmas and which resorts maximise the chance of snow?

Les Arcs - La Plagne are both high resorts offering nice blues and sensible reds for progression.

At Christmas I've been to La Plagne (several), ADH (a couple), Les Contamines, Tignes and the odd day or two in Austria.
Christmas 2014 we were due to go to Les 7 Laux and had to switch to Tignes at the last minute (driving DIY so no major issue) as Laux couldn't open due to lack of snow and this Christmas just gone (La Plagne) wasn't tip top but prior to that I've had some good uns.
As advancing beginners you are going to be less concerned with the overall snow conditions - as long as there is something to ski you will be fine.
That said, at that time of the year the weather can obviously be a bit rough and so staying lower down (with access to high skiing) and/or having runs in the trees available is desirable.

We are going to be skiing in Soelden for the third year running the week before Christmas (and we didn't have any problems last two seasons which started out less than stellar as they were committed to get the valley runs open plus the majority of the main ski area is above 2000m and they have two glacier areas).
As my husband can't take me out of school during term time... we like to be secure in the knowledge that if all else fails the glaciers are there as a fall back option.
Plus we like Austria generally (and France and Italy  )

Have a look at Cervinia...with the added bonus of being able to ski over to Zermatt (where you could go, but it's pricy and perhaps not as early intermediate friendly as Cervinia). I've not stayed in Cervinia, but over in Zermatt for early/shoulder season skiing in late November. By then there are usually plenty of runs open above mid station on both sides so by mid December you'd be well set up.
