Hi,
We (3 adults) are planning on going to Austria from 19th March - 26th March. We havent found anything that is in our price range yet (£700 for half board, lift pass, travel). would it be wise to just book a flight to Innsbruck or Salzburg and just wait it out? Do Austrian accommodation prices drop the closer to a ski week?

Look on booking.com for accommodation or go to the specific area's website and look on their accomadation section. Sometimes there will be an email link from that section that you put your dates into and you get loads of offers of accomadation owners direct.
Don't forget that Munich airport is good for Austria too.

@sn00boarder, my experience has been that no, the hotels don't really discount close to departure date in Austria, it's more the price is the price. You might get a deal with a TO to Austria but not very likely DIY. So I reckon you are better off finding somewhere that is in your budget now.
