There are numerous variable involved in answering your question and there are some good points made in this thread but bear in mind it doesn't matter what sport you do, the marketing people will be after you year on year with promises of unheralded improvement if you change to their product with it's amazing newly discovered technology - it's about making money by taking yours!
The fact you can get the same model of ski with 2 or 3 year old livery on it for less than half the price of the same ski with the current livery on it says quite a lot about what's going on and the purchasing habits of skiers. Skiing is a high end sport that takes quite a lot of money to partake in and marketing people know that! There is brand snobbery galore.
There is a huge amount of re-inventing the wheel going on and tweaks to gear will have such miniscule improvements the average joe skier skiing a week or two each year is not really going to notice.
If you're a 65yo rough style intermdiate skier, getting suitably fit pre skiing with some gym work and then working on your technique with an instructor would most likely be a better investment than new gear for the sake of it unless your gear is really out of date and banged up. Maybe just keep the gear you have tuned up? Maybe make use of a demo day and try some different skis if you really think a change is needed before buying.
If a splurge makes you feel better though and you've got money to burn then go for it. We all do it....silly us

Applicable to golf and other things nowadays.
My biggest improvements came from lessons n fitness.
Mind you, tech does make a difference but over about 5-10 years, depending on the sport.

@Klammertime, good post. TBH, if they were bought new and well maintained I wouldn't even be considering buying again after a few weeks skiing. It's the fact they are ex-rental ski's plus that the OP is skiing a fair amount/taking lessons, suggests to me he'd get more thrills out of something new or newer.

@Charliegolf, for a ski suggestion, these are seriously good and at potentially a decent price https://www.theskierslounge.co.uk/skis-and-bindings/skis/kastle-skis-fx86-skis__1885 that fulfill the new and not ex hire criteria.
But, and this to me is the most important;- they are a very small amount longer 2cm, but have a little more support from their waist width for general skiing at 86mm underfoot.
More than that, they (these series of Kastlè skis generally) have a huge gateway of performance from lower skill to extremely high, effectively covering where you are + significant development potential in the same ski.
The tips are genuinely interesting as they have a shovel width to make most snow conditions more enjoyable with low effort, and a reduction of weight (that hollow egg shaped patch) that reduces inertial load on your legs.
The combination is a particularly sublime construction in my experience that are fantastic to ski.
