Hi everyone!
I'm used to doing last-minute bookings the week before I want to go in January as its cheapest then. This year I can't go until the end of March.
My question is: Is there a drop in prices as we get nearer the time or should I book now if I see a bargain? (looking at about £300-350 catered or half board in a big resort, probably France)

If you are used to booking late then why not stick with it. At least you know where the snow is and you rarely see the price go up the nearer to departure you get (except on scheduled flights where the TO releases the seats on hold I assume). The only down side, as you will know from your experience, is the lack of choice about where you go. So if you have your heart set on a particular resort or accommodation then book early (or when you see the price you like).

I have a friend who tends to book last minute in late March via LastMinute.com and he seems to get really good deals. It is always "allocation on arrival" (i.e. pot luck with the hotel) but he's always been happy with the hotel he got allocated. I think people (mistakenly, IMHO) think late march is "dodgy" for snow so deals can be had. However, with really good snow this year perhaps people will be happier booking in late March so maybe this year will be different... If I were you I'd hold out, even if you don't get a deal I don't think you'll have trouble finding somewhere if you are flexible.

Queastion I suppose I'm also asking is Do the prices go down much under £350 toward the end? I can't see anything much in that region at the moment.

I've done this a couple of times and struck gold both times with lovely accommodation - however, I was considering the same for January this year but Last Minute appear to have changed the way they work and weren't including transfers with their deals - they were quoting around £800 for transfers (I know you can arrange these yourself, but it all starts adding up and its no longer a "Cheap and easy" deal). I don't know if they've come to their senses and changed this, but worth noting if you intend looking to Last Minute...
Also, a tip - although they're allocation on arrival and they don't advertise who the TO is, Last Minute have to put the ABTA details of the TO somewhere on the page, so you can see who you'd be going with!
