From a skiing point of view what are you looking for?

Well, the person's real but it's just a made up name, see?

Helen Beaumont, nope, everywhere I've been in France was a rip-off, and I'm talking skiing and none skiing trips (Chamonix, VT, La Plagne, Courchevel, Nice, Monaco, Paris)

Charlatanefc, ok, I've not found that in Serre Che, but I've not been to Zermatt either.

Davos.
If you stay in the youth hostel then it's as cheap as anywhere once you've bought your lift pass. But if you are on a budget keep out of the mountain restaurants.
IME Switzerland seems knowhere near as expensive as its reputation.

RobW, I surprised you reccomend the Youth Hostel as a cheap option. I stayed in Saas Fee and Tasch (for Zermatt) in 3* hotels cheaper than a dorm bed in Davos YH. It is nice though.

Crans Montana? but as skilegs says it would be helpful to know what you're looking for, there are a lot of mountains in Switzerland!

Meiringen would push the not too expensive button. It's not big though (60km or so I think) As has been said, depends what else you want.

Mike Pow, ?? a little bit more snow condition dependent than some - with most of the fun being off-piste and needing a guide? Nice old town though and a great resort to get to by train transfer from GVA/Zurich.
I would say Zermatt.
