Speculating on a cheeky weekend (this weekend) whilst OH is away. If I arrive at GVA at 16:30 on Friday 8th, can I get to La Tzoumaz that evening using public transport and returning to GVA on Monday morning (Sunday evening)?

Take a look at the SBB travel timetable ‘Genève-Aéroport’ to ‘La Tzoumaz, télécabine’, but I suspect not. But there are trains every half hour to Riddes at that time, where you could get a taxi up. Or Martigny (if it’s a Martigny taxi coming out to Riddes, then it may not make much of a price difference). I’d email the La Tzoumaz Office de Tourisme who have a list of local taxis.
Monday morning (11th.) 06:44 is the first bus out getting you to GVA at 09:41 and then another at 07:44 and 08:42 then a gap ‘till 12:00 - see the timetable.
You’re probably too near the travel date for the SBB Saver Day Pass to make much/any difference but worth a look.

@LaForet, I've had to give it a miss as I couldn't make the flight timings work with other things I have to do today and Monday. Shame as it would have been fun as the snow conditions look great. I'll just have to be a bit more patient until next month's scheduled trip.
