I've searched but not found a great deal on the subject.
Which GoPro would you suggest I purchase, the Hero 11 or the Hero Max?? I'd like to be able to get some great footage while skiing but will also use for other activities. I like the Max but worried that it wont be able to get good "normal" footage.

But are the 360's only good when using a held stick to attach it to? I'd like to be able to attached it to my two son's (beginners) via a helmet mount, but will the footage be poor if the camera is not elevated higher? Likely to use a helmet mount myself most of the time too.

You can use a 360 camera on a helmet mount, but they tend to be a bit larger so perhaps more annoying than a traditional POV camera. You can see the form factor of the cameras (and the distance from mount to lens) if you think that will affect the perspective.
If you google you'll find examples of helmet mounted footage from all types of camera. I don't personally like the perspective much, hence it's not an issue for me. Search here and you'll also find skiers who use a pole strapped to their ski pole, for a different perspective.

@Roscoe, attached to helmet you tend to see some of the helmet, I tried a long stick inside a rucksack which was a bit better.

Here's a still from a clip someone I lent my pole & camera to came out with. This is just holding my pole along with his right hand ski stick, probably the first time he'd done it. His style is very much American, and he's got that slight stem in there now and then. But anyway, I'd say that's a perspective one would be hard put to get from a GoPro type camera.
I'm not a fan of helmet mounted cameras. Sure, you get the "point of view", but it's a very limiting perspective. I see fewer people bothering with it these days, maybe for that reason.
As per previous post, actually fastening the pole to the ski pole may work better. With snowboarding, you have to spend some time learning how to ride with a pole, although that's also true for using a GoPro. Anyway, I expect with a bit of practice one could do a lot better. I shall now go and see if I can create a clip from my skier buddy's footage, which I'd forgotten. Well they are ego cameras.

Check out Abe Kizlevits on YouTube or Instagram, he does some cool stuff with the max and GoPros in general and has lots of tips and tutorials for mounting, settings, editing etc.
I’ve got the max and love it, I position on my helmet towards the front and it gives a really good POV. Plus you have the ability to change perspective while editing so your videos aren’t just limited to a single perspective.
The downside with the max is that it’s a few years old now and the tech maybe slightly outdated in comparison to the Hero 11? Plus you can get a max lens for the hero 11 which gives a larger field of view.
Also the max is terrible underwater due to the curved lenses, making the image blurry. worth considering if you use it outside of the ski season. Also maybe check out the insta 360 X3 as an alternative to the max.

If you are looking for 360 cameras, I would strongly recommend Insta360 x2 or x3 they are great !

Yeah, I have an Insta360x3. It's 1080p once extracted, not 2160p (4k) like a traditional 4k GoPro. However Topaz AI gets it a fair bit closer to 4k to the extent most people likely would not notice.

"360 videos are captured at 6K resolution and stitched to 5.6K".
All the consumer 360 stuff is the same, or was when I bought the x3 the other week. You have 5.6k for the spherical video, once stitched, out of which the user can extract 1080p or there abouts. I suspect the data rate and codecs used by the x3 provide the additional quality it shows.. as ever, it's not just about the pixels (but more is always good).
