Hi, it’s been over a decade, perhaps a dozen years, since I was last on here so hello again.
Anyhow, I’m off to Cervinia with some beginners in early April and would be grateful if anyone can advise of very easy slopes to use and progress on that are as safe as possible.

Welcome back - I was away for a few years too!
If you have a car there are some great beginners slopes above Valtournenche - the blue runs up from Salette IIRC (you see a number of instructors there with beginners). There are also some good blues immediately above Plan maison - piste 8 and the long piste 5 might suit.

There's a drag lift running up from Plan Maison. The piste has such a shallow gradient that snowboarders often have to take off their board and walk. Perfect for learning to snow plough. Someone filmed it: http://youtube.com/v/iyQPWQcP7yE
If they are open to being a bit more adventurous, and the weather is conducive, you could get the lift right to the top, Plateau Rosa, and then ski the blues on the Zermatt side. As this is all glacier, the pistes are incredibly even, with scarcely a bump, and are also super-wide, so very low risk of collisions.
