@hammerbjj, the answer to the question very much depends on where you want to go. For example this weekend in Scotland there is lots of snow on the hills, the resorts are open, the weather is likely to be ok for skiing. There are obvious options depending on your budget, and which resort you plan to ski on.
The cheapest option for a weekend would be hostels, probably SYHA in Scotland which is part of the HI hostel group worldwide. They do sometimes offer rooms for two people, as well as bunk beds in shared dorms which would be the cheapest option. Best to be a member to get better rates, and it is cheapest to join in your own country generally.
Bed and breakfast options are possible, and some of the resort ski websites have links to local accomodation such as these. Some might also have their own options, such as Glencoe has cabins available but they may be booked up this weekend by now.
Airbnb can help out with remote areas where there might be rooms in Ballahullish or Glencoe, Fort William, or Aviemore.
When there is lots of snow, the spare rooms tend to be booked up fast near all resorts. Especially when there are school holidays. Tourist information in ski resorts generally have last minute accomodation booking (take what is left type of arrangement). If you just turn up it will probably be quite expensive for a weekend, except in some Swiss resorts where they have a very extensive last minute accomodation arranging service in resort. I would guess most resorts tend to discourage this type of turn up and see approach.
If you are looking for package deals with accomodation over a long weekend, there may be specialists in this field, but they will predominately concentrate on flights from London and into resorts close to airports like Chamonix or Brides les Bains.
There are so many options and combinations which may apply depending on where you live in the world, how you are going to get there, least of which will be where you want to stay and on what budget.
Seems you need to be more specific to get a more specific answer, but generally it is possible but not something which makes a lot of money for anyone trying to do this for the bulk market.
Coronovirus might keep resorts empty, and so just turning up might result in cheap deals. Phoning up tour operators (large ones) and asking for anything from anywhere for the best price might result in something.

Thanks @Bigtipper for your detailed response, much appreciated. I think I may head to Sct and take a chance there rather than perhaps heading for mainland Europe. I can easily drive from where I live(Thornhill, West Yorkshire) rather than be restricted by a cancelled or delayed flight due to the Cornovirus. Not sure what the weather/snow conditions will be when I do head up in a week or so. Have you been to Glencoe and how would you rate the runs?
I did have a look at SYHA and there are some good options, mid week, so that will suit me fine. Just slightly concerned of skiing on my own and incurring an injury, but hopefully a smaller ski area will mean I'm found alot faster.
Thanks again

i"m in the same boat, looking for a ski weekend in march or april on my own, at the moment i"m looking at pila with interski or le grand-bornand with ski weekender, or a do it yourself job flying to innsbruck for its multitude of small ski areas or geneva for chamonix, i"ll just wait and see where the best weather and snow is, the coronovirus dont bother me so that wont affect my decision.

Anyway, snowHeads is much more fun if you do.

@hammerbjj, the runs in Glencoe depend on the snow level. The beginner runs at the moment are in great condition. Intermediate runs are probably as good as they ever get. Expert runs are usually closed(flypaper is the only black run in Glencoe, but there are plenty difficult runs which are not black), and are currently an avalanche danger. You can get more detail on their website and the ski scotland website for all resorts. However, a week of rain and all of the good skiing will be gone so now is a good time as it may get windy next week.
However, when there is this much snow, there are plenty of opportunities to ski all over the place.
Looks like there are plenty of people skiing in Glencoe today on the webcams. Unless you go where you should not go, you will be fine. Do not go off where there are no people, which would only be where the expert runs are.
Difficult to get lost at Glencoe if the weather is good, but watch out for sudden mists.

Nice pics of Glen Coe.
Is that a new chairlift in the first one?
Thought they only had access chair and the one-man chair higher up?
Heard of plans to introduce a new chair but didn't know it had happened!
