I've flown with them out of Edinburgh and they didn't check my ski bag.

We've flown with them a few times with 2 pairs of skis in 1 bag, have never had the bag checked and have had no problems

The website definitely does not say you are limited to one pair per bag, and nor does my booking confirmation - it seems pretty clear that you are paying for a big bag up to the stated weight, and that what is in it is up to you. I think the 1 pair per bag thing is simply a wheeze of the tour operators, although aren't their charges are often lower than the £30/£25 each way Jet2 charge.

That's what I'm thinking, they are just putting a weight limit on them! Which in itself is quite high.

We flew from Leeds -> Geneva last month with Jet 2 and they did NOT check the contents of the ski bag, just weighed it. Also, they allowed us to check in a seperate boot bag as part of sporting goods allowance, as long as the overall total did not exceed 20 kg. This was seperate to the "normal" hold luggage allowance.
What made it even nicer was that the skis were going free anyway!

We've never had a problem with two set of skis and poles in a double bag on one carriage.
