As a chef, you can pick and choose. Decide what you want - big nimbers, set shifts, large kitchens (hotels); few covers, fancier food, intimate atmosphere, more jack-of-all-trades (chalets); big choice of resorts/positions, summer opportunities (big ops, eg First Choice, TUI, Neilson. Inghams) or winter only, specific resort (numerous littie chalet ops). Look carefully at employment packages - you want decent basic pay, health AND ski insurance, lift pass, guaranteed decent accommodation (ask searching questions about this one!), end of season bonus. And you don't necessarily have to put up with employers keeping back a 'retainer' each month or asking for a huge deposit up front.
Upmarket and high standards - Scott Dunn, Flexiski, Descent International
Mid range - Ski-Val, Ski Beat, Le Ski, YSE, Skiworld
Mass market - TUI, First Choice

They're in the same price range as the others, and offer a similar service.

Slver Ski and Ski Olympic are rated as 2 that get the "work life balance" right.
