Sometimes you hit them, and they move out of your way.
Sometimes they are firmly attached, leading to you being moved out of your ski.

Death cookies are bad, but even worse is deep-frozen corrugated, wind-scored rutted snow. I have vivid memories of skiing that stuff in Scotland!

I thought death cookies were closer to wtfh's description - toasters and microwaves waiting to trip up the unwary skier - not sure how you ski them, except one footed when the other ski has fallen off!

Skiing death cookies, especially the ones left by piste bashers: go slow, muscles tensed all the time and make sure you can ski on one ski when you have to, what fun.
