Basically all flat skis, don't know of many that come with any kind of plate that doesn't indicate a particular binding. Race skis are pretty much pre determined, rarely the plates are redrilled for other bindings however possible, in such instances, and given they're designed to Alpine Noms and carefully optimised we ask now questions. It's that ski, in that teams colours with that binding on that plate and to hell with the consequences. All other skis, as you correctly point out are not for us, are for rental, and as said banged out to the public for the recreational skier who wants to do away with rental, but has not particular love of skiing other than a theme for their holidays, and that is super cool too, we fit a fair amount of boots to that demographic but rarely do they have needs beyond it being a ski and it goes skiing.

Seconding the SE guys channel and site. I've checked it before buying anything in the past few years. There's something about them that feels pretty honest and relatable. There's also a consistency that means you get a good idea of differences between models.
I've long assumed that at my level, probably an enthusiastic lower intermediate, I can do exactly what you suggest and get the right ball park for width, radius and length and be more than happy. Only issue I ever had with skis was a pair of rentals that had flapping tips at speed. I think that maybe suggests dampening over stiffness but there's probably some overlap in use there.
Anyway, agree with the post, obviously as it was also my general line of thinking. So I'm really just appreciating my own thoughts here...

They absolutely will if your boots are too soft or your balance point, either through technique or Boot/binding geometry are negative.

@BobinCH, I used to agree, however sadly, like all things done by riders for riders commercialisation has skewed somewhat their impartiality. Whilst the format is still the same, the format of what they talk about has changed dramatically based on who pays.
