You'd better define scenery better, as it might refer to architecture of resort or landscape of mountains.
I don't see how anyone can go wrong with mountains, but my wife swore she would never go back to Serra Nevada as there wasn't a tree to be seen, a real moonscape (didn't help there wasn't a lot of snow at the time). Trees can also help during snowy or cloudy weather. I guess the problem with going quite late is it means you need high, for snow, and high means above the treeline.
Soldeu is nice with trees and good schools (do think of that factor too), and while not so high they do manage the snow really well. Not great architecture though.

Love VT, and regularly go in April for some late skiing. I also have no issues over how it looks. However, for the first time with the kids in the same week you mention, we went to Avoriaz as I felt it was a bit more family friendly, had better beginner slopes and had a few trees. Lots of skiing for beginners at 1800 which should hold up okay in late March. Lots of higher skiing too.
Soldeu is a fantastic resort and great skiing area, with great ski schools (I learned there!) but not sure how well the slopes hold up in late March.

Fair point, they manage well during the winter, but I guess when warmer even the manufactured stuff might not be that great.

I would suggest Scandinavia.
Pros - it wouldnt be late in the season for there, we found the tuition is excellent when we went to Trysil, it had a decent beginners area and most Trysil itself can be accessed by easy runs so beginners (once they progress a bit) can get all around the resort and have quite a sense of achievement, DIY is really easy.
Cons - can be expensive, not alpine scenery but has its own undeniable charm, lots of drag lifts.
