I'm getting mixed opinions on whether this should be done or not.
The ski's were originally fitted with a pair of Fritschi touring bindings.
Can the original drill holes be filled and then new holes drilled for the new bindings, assuming the new holes aren't too close to the original holes?

two ski techs in France said they wouldn't do it as it's not safe but I know plenty of skiers who've filled and redrilled without any issues

Yes in general, the core material may affect your choice a bit. Honeycombe/foam type cores are supposed to be not so good as wood.
I've refitted bindings where 2 of the new holes were 1/2 over the old holes (filled with fibreglass down and araldite).

I think the preceived wisdom is not more than 3 times, as the structure would be starting to get a bit like swiss-cheese. Depends how close the old & new holes are too.
I regularly shift bindings - often set up an older set of ski with tele-bindings when I get a new set for alpine skiing. Just fill the old holes with epoxy so water can't get in.

It's for a pair of Volkl Bridge skis which I'm pretty sure have a wood core.

generally as long as the new holes are more than 1cm away from the old ones then you are fine, make sure you plug and seal the old holes or water will get in and much will follow
