martone, The only short trips I have been on have been to the 3V area. Each time it was hotel type accomodation. Stayed in La Tania at the Hotel Montana. In Val Thorens - Hotel Le Val Thorens (this was a last minute idea, phone and go), Le Bel Horizon and in Dec 2008 the Mecure.
Never seen a lack of snow in VT in mid Dec but the weather in VT can be rather extreme.
I'd recommend you contact the hotel directly rather than look at internet availability. All the hotels mentioned were helpful, but not exactly budget.

Well, the person's real but it's just a made up name, see?

martone, you'd be unlikely not to have enough snow to have a great time in Val Thorens but another good choice would be the Espace Killy (Tignes, Val D'isere). But the Christmas week is a very busy one which starts on 18 December - or the 19th in some cases depending on how the changeovers are being handled. That means that accommodation will be a lot more expensive than the previous week and it will also be more difficult to persuade anyone to sell you just three days. If you went mid-week the previous week (ie come home on the 18th at the latest) you'd have heaps more choice and the pistes would be a lot quieter - very important for a first holiday. There is excellent tuition available in the Espace Killy. Tignes is likely to be cheaper than Val D'Isere for accommodation.

Maybe St. Anton. There will be enough snow for sure and definately an attractive place, bags more pre-xmas charm than the French resorts.

St Anton not really an option for a complete beginner,
what about Les Coches for easy runs and ski schools, (bit worried about the altitude for this time of year).

Avoid Les Coches for sure- just way too low to be sure if the snow will be good and you don't want to put girlfriend off skiing for life. If you want to go to Paradiski this early in the season, try Belle Plagne or Plagne Bellecote instead, it's high and dripping with easy cruisy blues from there across to Plagne Centre. Runs can get busy though.
