Been to Pas for the last 3 years and have a great time every time. We went with First Choice Ski and stayed in Llac Negre. Basic, warm, clean, great food, excellent staff. A 3-5min walk to the lifts. Its excellent value for money and recommended.

Whatever you do, don't bother with Neilsen. They still haven't resolved the series of complaints made about our trip in January.
Most of the other companies out there seemed relatively well organised, but the standard of accommodation seems to be pretty dire compared to other resorts of similar size. That said, what you spend on accommodation you will save on lunch on the slopes and in the duty free!
Having seen the options, there isn't a decent/luxury hotel anywhere in El Tarter, so you'll have to search in the other resorts I guess.

Grandvalira is a great ski area with two main resorts for access that Brits tend to go to - Pas & Soldeu. Pas is a lot more lively so if you're after a party week then it's probably your best bet. Soldeu is quieter but still has some very good bars, but a bit more expensive.
Monium, if you're after a nice hotel in El Tarter try the Nordic.
