Ricklovesthepowder, Rick, you want something quite solid I suggest.
In Chatel you're going to find lots of Rossignol, so Maybe the 9X Oversize? 80mil underfoot which will help if you venture off piste and it's sort of a detuned race ski (although it's not really a race ski) so it'll be a bit beefier. It's a very easy ski to ski, race "pedigree" nonsense notwithstanding.
They go up to a 180 and frankly, given your weight, you might want to go there.

thanks under a new name, i will give them a try, Do you think the ski shops will have those aswell??? i know absolutely nothing about skis whatsoever. When i go should i just ask for something to use for carving and for my first attempts off piste and see what they recommend to me??? cheers

Anyway, snowHeads is much more fun if you do.

Ricklovesthepowder, Dynastar Sultan or Fischer Watea 78 will both carve and let you go off piste. Maybe Volkl AC30 if you like something a bit stiffer. Ask their opinion but having a few skis to ask for won't hurt. Make sure you can change them without question during the week.

By the sounds of it you'll probably be best off asking the rental shop for the biggest skis they've got. Most rental shops won't carry an extensive stock of specialist skis so you'll probably end up with something around 185 in length & about 85-90 underfoot.

Ricklovesthepowder, at your size I don't think there is a single ski that will help you in both areas. Probably best to find a shop that will let you change ski part way through (or even alternate days), and then make a decision based on the expected weather whether you'll be on piste or off for a day or two. If there's a dump forecast, plan to have off-piste skis for the day after; if there's no fresh snow about at all, work on your on-piste technique, as the off- may be a bit tricky. For carving on piste there will be loads to try - essentially go for some kind of slalom or skier-cross ski, typically 170cm long and <70mm underfoot, radius <15m - there will be hundreds of skis that fit this bill (Salomon 3V, Atomic SL, Head SL or Supershape, Elan SLX etc). This will however be completely hopeless for you off-piste, where you'll want something 180cm+ long and 88mm min underfoot - then look for Zags, Scott Missions, Salomon Lords, maybe Armadas or Black Crows (although they're probably a bit esoteric for Chatel) or something of that ilk, although they'll be a bit sketchy on piste. That 9X Oversize is probably the best best for a single ski compromise, but don't expect much in the way of help in medium-soft snow from it for a man of your calibre!

wow thanks for the help guys. the changeover thing i would never of thought of that but sounds like a good option actually. do i get charged twice for ski hire though??? the off piste wont be heading totally off piste. There are quite a few areas where im heADING WHERE YOU CAN LITERALLY BE WITHIN 50M OF THE MARKED PISTE. THIS IS WHAT IM THINKING OF DOING AS THE OTHERS WONT BE GOING OFF PISTE. (sorry for the caps just looked up) i would say 90% of my time will be focusing on carving and the rest attempting to ski the powder off piste because ive never really done it. Did it once on piste but after the piste had been prepared for the next day about a foot of fresh snow had fallen so really it wasnt the same as under the powder was a hard packed piste - cheating really but still good fun.
Think i will ask when i get to the shop if i can rent a pair of off piste skis should i be lucky enough to get a powder day. How hard is it to ski on piste, with off piste skis???
