snowfiend, we are lucky as we can both ski (though me (Rob) not well thanks to knee)
when we book a holiday we tend to work on finding somewhere you can go skiing but there are other things that can done. Whether this be going for meals and socialising ,or more engergetic things dog sled rides etc
this way there are things you can do together
also chances are she is worried about holding you back. I know I feel like that at times as I did my knee last year in Whistler on the 3rd day and spent most of the rest of the holiday in a bar drinks but not skiing
while she is in ski school you could be scouting nice easy slopes for her to practice or you could bedoing the more energentic stuff .
i was paranoid about t-bars and stuff before I went and after a couple of goes it was all sorted.

Send her to see a hypnotist. my sister had been to scared to get in a lift or a plane or a train for about 12 yrs. We took her to see a hypnotist then took her out and tried a few lifts no problem! So we moved on to a flight to Calgary from UK no problems! then the lifts at Banff, no problem then the chair lift at Kicking Horse (in summer) and the best of all the glass bottomed peak to peak in Whistler. Now we have to work on her dislike of snow and cold and she can join the rest off us skiing.

We are back...... I cannot really believe it but it totally worked !!!! Firstly the flight, usually very stressful for her, was very bumpy, one of the worst I have been on. I checked on her now and again, not wanting to make too big a deal about it, but everytime she was calm.
After the flight we both still thought the slopes could not be fully cured. She has only continued to keep skiing because I am so obsessed Anyway all I can say is the NEXT DAY she was coming down a black run !!!! We had a great week and ski'd hard from 8.30~4 every day. No fear on the lifts, normal anxiety with the difficult runs.
The reason she could progress so quickly was because she had good technique after all the years on the flatter slopes and not because she has more natural talent than myself
I do not know if hypnotism would work for everyone, but in our case, it did.
