My wife struggles to get one of her skis flat on the snow. Obviously this causes no problems when turning but we consistently found that she lost speed more quickly on flat bits because of this problem.
Is this a technique thing or is it what the canting adjustability in the boot is designed to deal with?

lower, the canting adjustment on the boot is to centre the cuff of the boot around the leg. If then the soles of the boot aren't flat then you'll need some shims installing between the boot's zeppa & the liner for which you need to go for an alignment/balancing assessment with CEM & Andi McCann.

So its a visit to a proper boot fitter that's required then for some proper fitting rather than just adjusting a few screws?

There's only CEM/Andi in the UK that have the kit to do the assessment/correction etc.

lower, Although the manufacturers call this canting its not, its lateral cuff allignment. Canting is what Spyderjon described. However if the cuff allignment does not match her lower leg it will make any problems worse. Example if shes knock kneed and the cuffs are pointig out to match a bowlegged person her natural knocked kneeness (May check with Carol Vorderman but doubt thats a real word) will try to pull the in cuffs which in turn will pull the skis on their inside edge. Vise versa if shes bowlegged and the cuffs are too far in the skis will ride on their outside edges. Checking this may help quite a bit if its out but a full allignment assesment will nail it.
To check cuff alignment remove the liners put her feet and foot bed in the shell and adopt skiing stance. You check to see if the cuffs and her legs go the same way. She should have the same gap between leg and shell on both sides. If not adjustst cuff as in boot manual and try again. Its not an exact science but you should be able to easily sort out any gross errors in cuff allignment (but not canting) this way.
