Straight skis had sidecut and camber just like 'carve' skis, so they could (and did) carve.

Megamum, 'straight' skis were just LESS shaped than today's ones... same general idea though.... IIRC Elan(??? on that) brought out "shaped" skis many years earlier... but technology not good enough to provide enough torsional stiffness in the greater width areas so they flopped...
Newer technology allows the design to work now...

How do you do this? Are you're binding set so your feet point more downhill or can you do this with a more sideways stance as well? I'm a rider, but can't get that low on a carve!

Technology PLENTY good enuff to provide torsional stiffness. Enuff to win Ski Magazine competition against snowboards. Torsional stiffness too much for recreational skiers at time (comparable to current slalom). Much too little front to back taper for all mountain use.

Betcha you also don't speed-scrub at 2 o'clock so you can steer inside and get low at 4-6 o'clock.

Reality_in_Banff, 'Alpine' boards and 'alpine' stance. The boards are torsionally very stiff, narrow and very well damped, the stance is very forward orientated and usually in hard boots. If you're riding 'duck' you'd need to have your feet in a plié to avoid hitting your knees.
