EDIT: les2alpes sounds good for begginers but the run down in afternoon gets very slushy, so its either a massive queue for lift down or a pretty hairy black.
What about tignes? There will be quality snow at that time of year. Also there is plenty for everyone. Whilst she is having lessons you can be experiencing the more challenging terrain and when she is with you, there is so much skiing to be done that you wont get bored skiing the same few blues and greens. Also it doesnt matter which area you stay in. There is a free bus that runs like every 10 mins linking the areas up. So you have a MASSIVE selection of nice restaraunts and bars.
Im taking my mrs this year,21-28th march. Believe me i spent loads of time deciding where to go, Tignes ticked all the boxes. If im spending a week on greens and blues, i dont wanna be spending the whole time on the same ones! Especially if its rubbish snow!!

The run down from where? That description doesn't match my recollection of AdH when I was a bungling gaper there a few years ago.

I think you've got the wrong resort - there's plenty of greens that take you home - check it here http://www.alpedhuez.net/media/alpe-d'huez-piste-map.jpg
Don't see many hairy blacks to take you home from the beginner slopes myself...

In a couple of weeks I'll be able to report back on a first timer going away to AdH with their highly experienced other half (we go for New Year). Although the gender will be the other way round and I'm the beginner!
I didn't take a lot of convincing to go skiing though, as I'd already dragged the OH to AdH this summer to watch Le Tour (I've got her into cycling, she's getting me into skiing!), so was duty bound to her choice of winter holiday. I'm having lessons in the mornings, and we'll meet up in the afternoon - with the little one who is in kids lessons in the morning and will ruin any idea of afternoon romance!
I'm not sure what others would make of this advice, but I've had a couple of fast track lessons at Milton Keynes Snozone, and can thoroughly recommend it. I'd have been bricking it on my first morning, but now I have a bit of idea of what I should be doing - including walking in ski boots and just getting all the kit on - I have a lot less to worry about.
With the AdH lift pass you get access to the leisure centre, pool and ice rink (surely that's romantic?).

hammerite, welcome to Snowheads . Have a great trip - and come and tell us about it afterwards. Some hours in a Snozone are a really good idea, though especially for fairly motivated and sporty beginners.

I hope so! Although my first attempt of turning at MK was a struggle, instructor said it was because I was leaning too much on the inside like a cyclist would. Once I got the hang of it though I was OK and then the instructor said "are you one of these cyclists who likes to go fast?"

Yes, the Dolomites would be fantastic. Nobody could possibly say the Austrians are more romantic than the Italians. Nothing romantic about oompah and lederhosen.

We're off to Alpe d'Huez for the second time this year and have to say it is perfect for beginners due to the big bowl of greens. However I would think it would be pretty boring for you if you were going to hang around there. Have you considered her having lessons on the dry ski slope at home, get her confident enough and then hit the luuuuuuuurrrrrrrvvvllllllllllyyyyyyyy motorway (wide and long) blues of La Plagne. I'd only been skiing once when I was tweleve but both my husband and I wanted to go. We did lots of lessons at lovely Stoke Ski Centre (Not so glam but does the job brilliantly) and then went to La Plagne with another couple who had skied a lot and we kept up with them easily.
