Sorry, this may be covered elsewhere, but are they for the whole of February? If we were thinking of going to France, would we be better off thinking of Jan or March instead? Or are there some weeks in Feb. that'll be okay?

Thanks for that. What is the snow like late Jan. in France, normally? Am I better off in mid March? Does it make a difference? Is it a lottery?

There have been really bad winters that didn't start properly until February (viz 1988 to 1990). The beauty of late Jan is that it's cheap and uncrowded and can be booked late. Mid March has milder weather, but is busier.
In your shoes I'd check out the snow and the deals as Jan gets going and ski in Jan if it's looking good. Despite the above, the snow in late Jan is usually fine.

Definitely avoid Feb if you have the choice skanky, and as DG says, you can get some pretty cheap deals in Jan.
