jazz1978, check the daylight hours - I expect you'll be able to find sunrise/sunset on a weather site. Wouldn't be surprised if the lifts are shutting around 2.30pm then, which may be a showstopper for you. You can get some incredible late deals to Norway at that time - half price or better...but that's why!
Other recommendations.....well 2 high level suggestions:
- For that week, there will be loads of availability and late deals. You could wait til X days (where X is based on how bold you're feeling, and how complex your requirements - just a couple, group, children, etc) beforehand and build a shortlist on Current Snow + Forecast.
- Search this forum for recommendations on Early season and Late season snow reliable resorts (roughly = majority of skiing above 2000m in Western Alps or 1500m in Eastern Alps,access to backup glacier, north facing slopes - but may be chilly in Jan!) . It follows that in early January (which could possibly be described as the early part of mid season) they'll be even more reliable!

JimiHendrix, not sure about skiing being restricted to daylight hours. Most places I've been to "up north" have many floodlight runs, both downhill and cross country. I haven't been to Voss though.

I went to Geilo in Norway the first week in January a few years ago. I think the lifts opened 9.30 - 3.30 and there were a couple of evenings of floodlit skiing too. Other issue (for me) in Norway is that the cost of eating and drinking out is extremely high. As well as the cost this meant that bars, etc were more less empty.

Which is why if you do go to Norway (which is not in the EU) you should make the most of your duty free allowance on what you can bring into the country

Alastair Pink, True, some "regulars" we met had taken about a dozen bottles of wine (it was pre the security restrictions on liquids). Bigger issue for me, as it was just my daughter and me, was that there was no socialising in the hotel (or anywhere else) in the evening as everyone was presumably guzzling their duty free in their rooms.

I've been xc skiing at xmas/new year, not at Voss, but in the Rondane mountains.
It is possible to ski until 3.30/4.00, and there was plenty of snow on both occasions.
