Keen has a few models that might fit the bill. Particularly the Howser model. Although the latest version looks like a bit of a downgrade...
You would need a small backpack to carry them, but it sounds like you are becoming more open to that concept. Not a big deal for me, as I always have a shovel and probe on me anyway, so need a pack, and these shoes are small enough to fit in there with the avy gear.

@Bones, Vivobarefoot is a great shout. My non winter gym versions would be lethal, but the trail running ones would work.

I also agree with the 'I don't want to be in soft shoes when everyone else is stomping about in ski boots" view. Great way to have a ski holiday ruined.
When I was a seasonnaire, I stashed a pair of steel-toed, insulated riggers boots (cheap witj soft, high grip soles, and toe/ankle caps) in a plastic bag the trees at the bottom of the gondola, before going drinking. Saved my toes many times.
My ski boots were awful, though. I now have no issues wandering around in my Gripwalk, modern boots, but don't really do apres ski much anymore, more is the pity. Old man who gets hangovers.
I'm actually shivering at the idea of walking through a ski resort in socks! I appreciate the sheer toughness, though. Bravo.

I walked some miles in socks once, in Meribel. A last minute, very cheap, pre-season few days in a catered chalet. I was on my own, as hubby had bad knee. They gave us a lift to the lift the first morning and I stupidly failed to notice exactly where we were. Or what a featureless suburban landscape it was. I skied with one of the others for a bit then went off on my own, met up with a Dutch girl and her father and skied with them till I realised that they were skiing faster than my competence and that keeping up was stupid. When I started on the journey back I realised my mistake. I knew the name of the chalet, of course, and asked, including in a shop in the vicinity. But everyone was "new" and had no clue. I was carrying skis, poles and the boots round my neck and beginning to feel a bit forlorn when I saw some people sitting round a table in a cosy looking chalet and decided to hike across the garden, knock on the door and ask. It was my chalet, but on a bend in the road and I'd come in "the back". They were very glad to see me as they'd been discussing whether they should raise some sort of alarm.
Didn't do the socks any good but it was very early season, the road was pretty clear.
No phones in those days....

@Origen, that is making me feel very cold...
We're your boots awful to walk in? My old Dalbellos were, hence me having some boots to hand at the bottom of the last run.

The boots were OK for the first half hour..... But the experience did me no harm (I was younger and fitter) and it taught me to pay attention to my surroundings and not rely on somebody else. It didn't endear Meribel to me, though.

I think we've identified that there is not a solution that meets all the highly specific princessy requirements of the OP. The question is which want should be compromised which is something only they can determine.

@TopGooner, out of interest which resort is this? And in the remote prospect of you find a suitable footwear solution, are you and your group really planning on walking a mile home each evening carrying skis and boots after a days skiing and a skin-full of apres on board?

@Dr John, he's said between Saalbach and Hinterglemm. To be honest for me the thought of a mile walk in the circumstances you cite would be sufficient incentive to be highly motivated to catch the last bus or failing that ensure I had a decent taxi budget.

I think if I was walking this far I’d rather have my ski boots on my feet than carry them. As much as walking in ski boots is a pain, carrying a pair of boots, skis and poles is a bigger faff.

I can't believe there's a thread on this ... scratching my head wondering how I've managed to have a couple of beers, a song and a dance at various establishments from the Folie Douce in Avoriaz, to the Rond Point via the Henu Stall, the KK, the Mooserwirt and Xandl Stadl (to name but a few) since my first trip in 1999 without losing my feet on the short walk back to our accommodation ...

@TopGooner, Taxis in Saalbach and Hinterglemm are all 8-seater minibus taxis. A taxi from the main bar area in Saalbach (Bauer's, Burgi's, Spitz, Off Piste Bar) will cost you about €4 each if there are 7 of you. It also means that you avoid the temptations of the bars at the Napoli, Hotel Post, Saalbacherhof, Schattbergstuben and Schwipp's (and several others) on your way home.

The original question in the thread title was genuine and there have been some very useful contributions from a lot of posters.
Also useful to know the taxis are 8 and not 6 seaters, so I think we're good.

I think you could just repurpose your gloves into shoes! Handschuhe = schueschue!
Or take a small roll of gaffer tape and simply call in to any nearby lift station on your way to the bar and tape piste maps to your feet.

I'm ideally looking for a pair of shoes which are waterproof, lined, lightweight, good rubber sole for comfort on gravel etc, thin, foldable / rollable, which I can carry in my ski jacket. I don't want to be wearing a rucksack during the day as I'm lazy and taking it off every time I get on a chairlift is a faff.
Does anyone know of anything which fits the bill?
I've seen a couple of start ups offering apres ski gear which seem to have gone out of business...

I almost always carry a very small low-profile rucksack these days; it doesn't inhibit sitting on a chairlift although some lifties insist you wear it on your front to ride up. That said, I love having spare socks/a place to put or don an extra layer, glove liners, sunnies for lunch time and, yes, sometimes a pair of lightweight trainers.

Pair of boots or trainers you’re not too worried about.
Lock them to a ski rack with a ski lock in the morning.
Hopefully still there end of the day.
Could even put them in a rucksack. Lock zip and bag to rack.
My wife has hidden an old pair of trainers behind a wall before.

Looks like the original poster is sorted with taxis but these are the brand of boots I got

The version I got was a few iterations before the latest versions they have now where mine crush down and come with a shoulder bag to carry them. But the latest lot still look pretty light and maybe can crush into large ski jacket pockets, or maybe look to see if the older versions are still in stock somewhere
