Mrs t_m recently bought new ski boots, which have the new-fangled grip-walk soles. She has 2 pairs of skis. One pair is new, fitted with Salomon Warden MNC (Multi Norm Compatible) bindings, so I assume no compatibility issues. The second pair, which she uses for teaching, are from 2018/19, and have Salomon AM10Ti bindings on a rental plate. These obviously pre-date the introduction of grip-walk. Her new boots seem to 'fit' these bindings fine, but obviously we don’t want to take any chances. If we get a torque test with the new boots and these old bindings, might they be ok? Or are older bindings with grip-walk boots a total no-no?

This.
My understanding is that gripwalk soles require a toe piece with automatic height adjustment to release correctly which most older bindings don't have. If you Google it, there is a gripwalk binding compatibility list published by gripwalk.
Therefore the only solution is to replace the older bindings with newer compatible ones or remove the gripwalk soles on the new boots and replace them with alpine soles to use the boots with older bindings.
Boots with alpine soles are all compatible with gripwalk bindings but not the other way round.

I would have thought that so long as the AFD has the correct gap, either by design or by MANUAL adjustment, then the Gripwalk boot should be fine, this may or may not be the case with your bindings, Gripwalk does not require an "automatic" height adjustment, just the correct AFD gap.........spyderjon???

When I bought new K2 boots last winter the fitter took off the gripwalk soles and put on alpine ones as my Atomic bindings on my 8 year old skis would probably not have been compatible - I didn't have them with me but it was highly unlikely they would work ok

I would say, if the AFD plate on the older Binding is a gliding one (e.g. Tyrolia, Look Pivot) and the height of the toe-piece is okay - not squeezing the boot that is -, you should be good to go.

No, it's got nothing to do with whether the AFD is fixed or sliding.
@telford_mike, an alpine toe that does not have manual height adjustment (either to the toe wings or the AFD) is then by definitions an automatic height adjusting toe.
Some alpine (only) bindings will work with GW soles and it doesn't matter if they have a height adjusting toe or not. Alpine soles have a flat sole so that when they sit on the AFD no other part of the boot sole contacts the binding. On GW soles the textured rubber sole to the rear of the AFD contact pad (ie towards to cuff of the boot) sits a lot lower and can often touch/drag on the base plate of the binding which would severely effect the lateral release.
So for a GW sole to function correctly in an alpine binding there must be no part of the boot sole touching the toe binding other than AFD contact pad sitting on the binding AFD. The reason that some bindings are deemed as not compatible is nothing to do with their toe height clearance of fixed/sliding AFD, it's because the lower sole drags on the base of the binding. So it's either new binding time or get the Dremel out.

I think Look GW Bindings handle both, without adjustment.....other brands may be similar.

Noting there are also your "Walk to Ride" soled ski boots to throw into the mix for good measure. Personally, I would look to get NMC bindings if buying new so it does Alpine, GripWalk and WalkToRide to cover all bases.
