Just for the hell of it I put your dates into Crystal ski website. Chose London departure, 2 adults. Comes back with 4 options for Arinsal starting at £577pp for half board.
I don't know what your budget is, but even a tiny bit of effort (2 mins) finds some options.

@zikomo, @Riccardo, and that's £577 right now, which is more than I'd pay for Andorra, £450 tops for half board. If you wait until nearer the time it will come down. I can go to Arinsal this Sunday H/B for £386. Quite a few tempting deals for this weekend.......

@billb, I agree on last minute bargains. Also I put zero effort into searching, just look at Crystal. Was just checking if there really is a problem with availability and there is not.

@zikomo, please read what I have written, it's becoming a recurring theme. Availability problems are in Baqueiras, Saas Fee and Grimentz.
I then said I'd look at Andorra, indicating that I hadn't at that point looked at whether there was availability in Arinsal.
