Looking at taking a trip on my own over the next few months, however, my partner is anxious about the safety of me being on my own.
Are there any apps or trackers that she can 'follow' along at home?
There is an app called SkiLynx which I think does this, but it isn't available in the UK.

My phone (Android) has a Share my Location feature with Google Maps. My daughten used a similar feature with her fiance's iPhone while he was hunting. It only works where the phone has cell service though, otherwise it's not transmitting the GPS info.
Spot and InTouch are GPS transmitters that can send location via Satellite. They are pretty pricy though.

Pretty well all European resorts have god cell coverage nowadays, I would have thought that anywher within the resort area is trackable with your cellphones regular apps as @sibhusky, says.

@winterstickboarder, my wife just follows me on FindMy on Apple devices ... works well when I'm out running. Presume Android has similar?

There is both Find My Device and Share My Location. They amount to the same thing. They track your phone, not you. If you're out at a bar, leave your phone in your room?

I don't use it, but hasn't WhatsApp got a feature that does this? Although it might be a problem if away from a phone signal

Speaking as a former "helicopter parent" with an extremely adventurous daughter, you can drive yourself nuts watching that dot. (We had SPOT when she was working alone and living in a tent in the Utah desert one summer.) Just a warning.

Sharing live location by WhatsApp works well and very accessible. I always use when skiing solo.

I'd advise that the best way to handle thus entirely understandable concern is to add some process as well. First, leave behind a sheet that says where you plan to go that day, and when you return write 'got back xx:yy' and then msg your partner when you get back each time. If you're in a hotel, then it's easy to have an initial action where they ask the hotel to check you've returned, or not - this doesn't involve pressing the panic button if all you've done is forgotten the time or simply forgotten to call back. If you have a second phone then that'll be useful if you lose the first or leave it behind in a mountain café. A tracker showing the mobile is at your accommodation doesn't guarantee you're back home, as you may just have left it behind.
I'm not saying discard using a tracker - just that it could be useful to have some process as well. If there's a clear plan of action for them if they don't hear, then I imagine that will be reassuring.

If you want total reliability, Garmin InReach is far and away the best (and priciest) solution. Entirely satellite based so no issue with phone coverage. I use this in “proper” wilderness situations and it is fantastic, but at £200+ for the device and £20+/month for service it’s a specialist solution.
If you use an appropriate Garmin watch with live track as suggested by @orange, you get the benefit of incident detection. I’ve discovered that chiselling the ice out of your mates bindings with a ski pole tip counts as an incident….

All sounds OTT if we arr talking about a normal ski trip within resort boundaries. Simple protocol with texts a few times a day should satisfy nervous ninny partners. She isn't practically going to be able to do anything if you were to get caught in an avy or fall in a treewell etc.

I'm a big fan of technology, but none of it will automatically tell people when you're in a tree well or slide, and if it did it would not work quickly enough to have any relevance at all. It depends precisely what contingencies you're trying to cover off.
I always get my partners to assume that I'll be randomly calling in at the pub/ getting a flat tyre/ having to save someone else's life/ changing my mind in all my outdoor stuff. That way they don't worry and don't panic when reality bites. If I wanted to be 100% "safe" snowboarding (I don't) then sticking to pistes where other people and the patrol can assist you has to be much safer than any number of technical toys.
You could just tell him/her that it's very safe as you're going with your toy boy/mistress.

This. Very odd for an adult to want to track another adults location whilst away on a ski trip. What good does your partner think it will do?! Your dot stops moving for an hour... are you sitting chilling out in the sunshine having a rest, or have your fallen over and broken your leg? If you have fallen and broken your leg, what is she going to do an out it?!
IMO trying to placate irrational anxiety doesn't help long term.

Get a good 4G allowance, leave your iPhone sticking out of your pocket just enough for the camera to be unobstructed, and live stream every run you do.
