always skied in Austria and Ski Welt last few years, at the moment Austria isn't an option because we will have to Quarantine on return.
Looking for similar resorts, maybe Italy or Norway. Have soll booked for New Year, looking at Obergurgl end of March to give us a bit more time.
So all recommendations appreciated.

On return to Ireland you have to quarantine for 14 days

Quarantine may well look very different by the su season, if this is an important part of the consideration, the most important thing to do is to wait.

Without wanting to sound like @Stanton it seems a bit pointless planning this far in advance. What are the chances of Norway letting anyone in to the country? No one has any idea what the state of play will be come Christmas (even next week is pretty uncertain). At the moment the only sensible option is to wait, frustrating as that is. If there is any ski season at all for those who dont live in the mountains one of the Dolomite resorts might be a good alternative to the Austrian ones.

I'm not sure you need to wait if you want to have something booked in expectation of restrictions loosening. There are a lot of options in terms of late cancellation without penalty for Norway in terms of accomodation and rental cars as I've been looking for Xmas, Skistar is also offering a paid "insurance" option to cancel and re-book. The only thing is flights that usually need payment up front, you can leave this late but this again can be somewhat hedged as many airlines are currently offering fee free changing of flights or credit vouchers (assuming you're happy to run the risk of them still being in business when you want to use it).

Obergurgl with Solden will provide the desired runs, late March might be a bit too warm to enjoy them fully if you take into consideration global warming. The glaciers in nearby Solden will still provide pleasant skiing.
Check also Serfaus Fiss Ladis.
Can't go wrong with the dollies either.

Blue and Reds......go to be Cervinia. High, snow sure and reasonably priced with the option to dip over to Zermatt.
