Hey,
New to forum and sort of new to the sport. It's been awhile since I have been skiing and I'm going to for my 20th anniversary. Very excited!
I needed gear and I really liked the look of snowboard pants vs ski pants. Will snowboard pants fit over ski boots? Sorry for my ignorance. Any help would be appreciated.

In my experience they probably will fit over your boots but tend not to be reinforced around the ankle so can get cut up by wayward ski edges...

Horses for courses , a lot both skiers and snowboarders wear snowboard pants, they definitely will go over a ski boot , but as Pynch says , a lot more ski pants have a reinforced patch around it .
Enjoy your anniversary , I would be more concerned with the fact your skis now will be a lot shorter than back in your day lol

@Scout331, What is it you like about the look? There are plenty of baggy ski pants out there. Going for the full teenage boarder look may not be appropriate for your age/style

@Scout331, baggy trousers are need to go over the padded pants that snowboarders needs to protect their hips when they fall

I hesitate to give anyone fashion advice, but pants have been somewhat less skinny for the last few years - see the Burton TWC range for example. Major back country brands (Arc, Pat) do not differentiate at all. What differentiation you do see is largely branding only.
Good back country riders don't generally use park/ pipe protection in my experience. Falling's rare and the landing is soft.
Oh yeah, I ride race boards with race (hard) snowboard boots, so although I snowboard in snowboard pants, I think that answers your question.
