Next season we're toying with the idea of going for a late deal last minute, wondered if anyone had any experience of what kind of things you can get? Probably be 4-8 of us, ideal would be a hotel but i guess they are less easy to come by than a chalet (in terms of late deals) but i'd be interested in people's experiences?

Depending on the week you want to go 8 in the same place can be a bit tricky.
When and how much would help people tailor their advice.
A big chalet hotel would be the most likely. Last season there were still deals on low weeks for a chalet deal ex LGW for 400 quid.

Picked up a good chalet at half price in La Plagne for Christmas week with just 6 days before. OK it wasn't the best conditions but hey ho.

As others have said keep the numbers low - 4 is ideal especially for a cheap self catered apartment if that's your thing.
Flexibility and preparedness id the key. If you can be flexible on dates, my group tends to go for one of the first three weeks in January and try to keep work flexible for that period. Then you can go for the best forecast (and therefore hopefully good snow) in a resort/country that has a good base and hopefully it's cheap too.
I've done everything from self catered at €270 to 4*HB in tinges (Diva) for €410 for a week (inc flights and transfers)

I did this for my Xmas and Easter trips [ Penalty of working in education is fixed dates ]. I liked to pick areas with good snow before booking. Two of us about 60% of the time 20% sole 20% x 4 people.
I would watch the web sites with last minute deals for the week leading up to the departure date sometimes booking late Friday for a Saturday departure picking up the tickets at the airport. I did this for 20 years and always got away although not always to my chosen area. I had some amazing deals 59 quid for 8 days in Courmeyer [ SkiWest] 150 quid through Skiline for a single room in a four star hotel in Ischgl [ Regular price 1200 quid ]
SkiWorld had the best website for this with accurate and uptodate information on it.
Skiline was a bucket shop operator who got last minute deals that the big operators did not want to advertise. They were my court of last resort when all else failed and always found me something.
I learned not to bother with Crystal whose web site was a bait and switch operation. Great deals on offer that ALWAY disappeared when you phoned to book and the operator would always have 'positively the last seats/accomodation available for full price less 5%' but plus 10% because of the admin fee and plus 5% for TOD.
Thomson used to run square deals, you would know the rough area you were going to but not the resort or the hotel. You would only find that out on the transfer coach when the harassed rep was trying to juggle what accomodation he/she had left. Still I remember finding myself in Zermatt twice for little money.

I'd forget about 8. 2 for a room in a chalet, 4 for an appartment if you want the cheapest last minute deals or be prepared to split across a resort. If a TO has 8 places in say a 12 person chalet they are more likely to mothball that week and "upgrade" the other guests than knock them out ver cheao unless they have no other way of selling flight seats they've committed for.
