Struggling to find web commentary on the difference in image quality between different models in the lineup. As in if all I need is to shoot 1080 @ 30fps then is there any point in getting something other than the entry level model? Or put it another way, will a more expensive Gopro do the same thing better?

For most peoples purposes any slight difference in the basic specs will be hard to spot, the main differences between the respective line ups is the variable recording formats and extra options. If all You plan to do is 1080 30fps then the lower end of the range will be fine.
However be warned it's easy to assume you don't need a particular option then all of a sudden you actually decide you want to use it but don't have it.
There are differences in the specs, some of the earlier models have plastic lenses as opposed to glass lenses as well as some of the new firware enabled options which vary by model also the bit rates can be slightly different but I stick by my opening sentence.

I want to put it on a chest mount and go downhill very fast while humming "welcome to the jungle". Does it need a polarizer or ND fliter to deal with snow in bright conditions?

I was in Braehead last weekend and there was a guy there skiing and filming with a helmet mounted Go Pro. He was on his own, not filming anyone else or doing anything other than repetitive laps of the slope. Might be a challenger for the most pointless and tedious film of the year.

I've always thought that these were just too expensive as a toy, but I'm now sort of tempted by the cheap one, even more so since I'm in the US at the moment and can get one for even less than the UK. Apart form the obvious connectivity issues are there any downsides to using this one for ski footage?

Main issues around the new entry level are :-
1. Camera is fixed in the housing.
2. Battery is part of the camera
3. Reduced recording formats compared to the higher end models.
1 means you can't take it out of the housing... no surprise.
2 means you need have a limited recording time unless you carry an external charger (but not always a bad thing with video footage)
3 only a problem if the option you want isn't on the list.

I never take mine out the housing and would only ever if I wanted it waterproof and if you have used all the battery you are either a pro who needs more camera gear or have a lot of rubbish footage you will regret when you edit it.
The first gopro in the right hands can make great footage still, it's a bit like skis you can buy the best fis carvers but you wont ever be a wc racer, but if you can get it cheap it only makes sense to buy the most expensive one

@geeo, indeed, I stil have hd1,2,3,3-blacks as well as 4-blacks. All still capture cracking footage, but 4k badly setup, captured or edited is still rubbish. Hd2 footage done properly is still great and better than boring 4k hd4 black badly edited.

I think you'll find that pub singing "livin' on a prayer" is faster. Got me through the carnage of Happy Valley very rapidly last winter.
