Looking for your thoughts for a good ski area in Scotland that may have decent snow for a short break that would suit a family of intermediates this Easter, cheers

Keep watching the snow and weather, stay flexible and book late.
Last year Nevis Range was scraped and icy, Cairngorm perfect snow to bottom car park. This year could be completely different

In good snow / weather conditions, Glenshee, Cairngorm, Nevis Range and Glencoe are all suitable for intermediates. You might find the Lecht a bit limiting.
Good snow and weather conditions at Easter is often the case in Scotland, but certainly not at every ski area every year. Check much nearer the time.

It's all been said by robapplegate and denfinella. When Scotland is good it's very very good but the wind can (more often than not) be the make or break weather feature - eg this weekend it could be up to 120mph  .
It can be pointless to book more than about two days in advance - ie once a fairly decent forecast is nailed on. From experience, and as a general rule of thumb, I'd advise only going if the wind is at a maximum of 30mph. It can all depend on wind direction/aspect of the slopes but any more than that can be misery - especially for kids.
